Bump scikit learn to 1.5.0

We have made sure everything work by using sklearn 1.3.2.
We should bump it to 1.5.0, but we need to retrain classifiers.
This is associated with this PR: #691

This is also compatible from python 3.11+, which is good: https://pypi.org/project/scikit-learn/1.5.0/
