How to configure multiple RR devices?

I would like to add a second Roborock S5 to my configuration but I'm not quite fluent enough with YAML or the HA script structure to figure out how to do that.
I have become more comfortable with HA over the last year or so, adding various device types and doing some simple automations. The vacuums have run successfully for that time using the original Xiaomi Home app and HA integration. I can see status and stop and start cycles. But no maps! The Roborock app is no help because my otherwise solid S5 vacuums are just a bit too old to be supported, meaning I cannot use that spiffy new native HA integration.
I then gave your HACS integration a try. I was able to get one of the S5s online and (once) returning a map on the Overview page. Now I would like to get the other one online and returning a map. The simple config directions worked just fine for one, but how do I add another?
And then, how to I attach it to each vacuum as a card so that I can see it in the assigned area and details page?

Which version of the integration have you installed?

I had the latest stable 2.2.5 version from HACS but recently upgraded to 3.0.0alpha-20. The documentation is the same, requesting me to directly edit configuration.yaml. That's where I get stuck, it's not clear how to configure more than one vacuum with different IP addresses and tokens. Of course, once you do edit that configuration.yaml then there is no UI configuration.

Documentation was not updated in the alpha yet. In alpha you just have to use the UI. You can remove stuff from yaml

This 3.0 alpha release connected where the older one couldn't, and now both vacs are present and showing their maps in my dashboard!
