Create paired-end options for the ITS sequence processing vignette

The current ITS sequence processing vignette only supports the processing of R1 sequences, following recommendations by Pauvert et al. (2019). This can be updated to handle paired-end merging by matching some of the code in the 16S sequence processing vignette.

This should be considered a secondary priority to completing vignettes that currently do not exist.
