Make axios timeout for Ollama customisable #849

Is your feature request related to a problem? Please describe.
The issue was already called out in #807 but I can't reopen the ticket.
Big documents running on slow machines can time out after 30 minutes. Since this is running in the background for me, I am fine with having a much longer timeout.
The hard coded value seems to only exist in
paperless-ai/services/ollamaService.js

Describe the solution you'd like
Make the timeout configurable via an env variable.
Describe alternatives you've considered
Rewriting the hard-coded value in my locally installed code, which works until I run the next update
