Converting to a single locale?

Wondering the best approach to migrating Fluid to be a single locale

For my use case, the store is a local business that won't use the locale features.

Would it be enough to remove the sanity-plugin-internationalized-array and @sanity/language-filter, or is there some more key areas that should be tweaked?

For anyone else looking to do the same, I've made a fork with the adjustments needed.
