Defaults to Monday as first of the week inside the date picker, where in Canada, Sunday is first of the week.

I will take this on next weekend.

I will introduce a new environment variable NEXT_PUBLIC_WEEK_STARTS_ON which will be a 0-indexed number of what day to start on.
The default will remain as Monday starting day if not defined.

Would be great if it was configurable on the workspace settings (same as the email visibility toggle). Ideally we need a separate table for storing this kind of configuration, but happy for it to go on the workspace record for now.
