Support for openai-compatible endpoint for embedding models

Hello,
First of all thank you for your work. I would love to make open-notebook run fully locally on my machine, unfortunately, it is not possible right now because openai-compatible endpoint cannot provide embedding models.

Is it somewhere in your roadmap to add support for that ?
