Add Goerli testnet to explorer

• chore: remove mention of Rinkey from README #519 removes all remaining references to the Rinkeby testnet (which is deprecated)
• When the protocol team has deployed Sepolia contracts, we need to return the testnet to both the README.md and throughout the codebase for testing
