Revert Dedicated server to previous version

I'm unsure how to rollback my server to a previous version as the mods im using do not work on the current version (bog witch)

Any ideas?

Let me know if you manage this, thanks! I'd imagine you need to disable the automatic update checks that the server does when no one is connected
