Improvement: Update examples

`plumber` has changed a lot since `docs/examples.md` was written and has been haphazardly updated.

Some of the examples might be referencing args that aren't there (and/or have been renamed) - go through all of the examples and update them based on how `plumber` works currently (as of 09.29.2024).
