[Feature] Switch to uv

Describe the solution you'd like
Have you thought about using uv for dependency management? I’ve been using it in several projects and have come to prefer it over a plain requirements.txt. I’m curious to hear your thoughts.

When I created this project I didn't knew about uv.
I now also use it in my python projects. I don't know how easy it would be to change because it would modify several things, such as the CI/CD and maybe the flake (with uv I'm still not convinced if the flake should just load the uv environment or create a nix specific environment, I don't have enough experience with a true NixOS on that)
If I have some free time in the next months I will check the feasability
