Cause of the issue is that the actual value of the field is receiving as [] instead of "[]". for all the places in expression editor it expects a value in string type. EX:- value 1 + 3 should be "1 + 3". this is the case for all the other places except the array editor and the mapping constructor

The current implementation of the expression editor is designed to use string values for both inputs and outputs. However, for ARRAY, MAP, NUMBER, and BOOLEAN types, the API currently sends raw values (e.g., [], {}, 1, true) instead of stringified versions (e.g., "[]", "{}", "1", "true").

This inconsistency requires manual data conversion during processing and necessitates re-converting them to their original types when saving, which adds complexity to the codebase.

The primary goal of this task is to ensure that the value field in the flowNode and getNodeTemplate APIs consistently provides string values. This change would streamline the implementation on the extension side and remove the need for redundant data conversions.

@nipunayf, could we update the APIs to return all values as strings? This would significantly simplify the extension-side logic and result in a much cleaner implementation.

For now, we’ve removed the special editor we added for arrays with this PR: ballerina-platform/ballerina-language-server#656. We’ll fix it properly with a new type for ARRAY.
