Closes #277

📝 Description

Briefly list the changes made to the code:

1. Replaced all color references with variable references to index.css or tailwind
2. Disables any theme variables outside of what is defined (I think this was already in place)
3. Updated index.css and config to show all colors currently in use
4. Added variables from style guide and replaced existing colors to match
