Add version to registration log and small refactors

• adding the version to the registration log will make it easier to see which version DBeaver is using
• refactoring the DataCloudDatasource to the actual driver jar will prevent people trying to just use jdbc-core from thinking it's a full JDBC driver implementation
• Intellij told me to make that field in the cursor final 🤓
