Add AllMiniLML6V2-coreml to NLP section

This PR adds the AllMiniLML6V2-coreml project to the Natural Language Processing section.

The project provides:

• A CoreML-converted version of the all-MiniLM-L6-v2 embedding model
• A fully runnable SwiftUI demo app
• A Swift tokenizer implementation + vocab
• A reproducible conversion script
• MIT + Apache 2.0 licensing
