It was never recommended to have it as a build dependency, and anyway it is not available in Debian any longer.
The package names all changed for some reason, and nobody bothered to explain this anywhere that I could find. Oh well.
Install README.md and qolibri.desktop; add copyright file. Simplify debian/rules: the override for dh_auto_configure isn't necessary (anymore?) and wasn't working properly anyway.

Now it builds with Qt6, there's a copyright file, and the README and .desktop are installed.
