docs: update deprecated io.ReadFile with os.ReadFile

Replaced io.ReadFile calls with os.ReadFile in use-cases example

• As of Go 1.16, this function simply calls os.ReadFile: https://pkg.go.dev/io/ioutil#ReadFile
