Rename sv-strip to svecosystem/strip-types.

Also not sure if we want to change any of the github related stuff to match up better here like I am using biome I think most of the svecosystem stuff is prettier.

Yea, I think we should restart it to 0.0.1.

We can keep that as-is for now. If it becomes bothersome for some reason in the future, then we can update it to match the rest of our packages. For now, I don't think it's all that important.
